Cooking eggs safely: from boiled to omelette

Cooking is the one step in an egg's journey that ends the risk rather than postponing it. Good refrigeration keeps the bacterial count low and an intact shell keeps out what is outside it, but neither sterilises the egg. Only heat does that. The difficulty is that eggs are among the least forgiving foods when it comes to heat: a few degrees above the setting point turns a tender omelette rubbery, and a few degrees below leaves the yolk liquid. So cooking eggs lives in a narrow band between safe and good, and knowing the numbers of that band makes the decision far easier than relying on instinct.

What is cooking actually getting rid of?#

The main hazard in eggs is Salmonella, which may sit on the outside of the shell and may also be inside the egg itself if the hen was carrying it. That second possibility is the one that matters in practice: because the contamination can be internal, a clean intact shell is not enough on its own, and washing an egg before cracking it does not help. This is exactly why the US FDA requires a safe-handling statement on cartons of shell eggs that have not been treated to destroy Salmonella, and its substance is three sentences: keep them refrigerated, cook them until the yolks are firm, and cook foods containing eggs thoroughly.

And because such an infection is more severe in some groups than others, being strict about cooking is not fussiness when you are feeding young children, older adults, pregnant women or anyone with a weakened immune system. For a healthy adult the risk is lower, though not zero, and the difference between the two cases is the chance that a passing stomach upset becomes an illness that needs a hospital.

The numbers that explain everything: when white sets, and when yolk does#

Egg proteins do not all set at one temperature, and that is the key to the whole subject. Separated egg white coagulates over roughly 60 to 65 degrees Celsius, while yolk coagulates over roughly 62 to 70. The gap between them is small, but it is enough to explain everything you already know about an egg in a pan: the white turns opaque and firms up first while the yolk is still liquid, and that is precisely what makes a soft-set egg possible. As the heat climbs, the more heat-stable proteins coagulate one after another, until you reach the dry, rubbery texture familiar to anyone who has forgotten a pan on the heat.

The number that concerns safety rather than texture sits a little higher: US food-safety authorities recommend that dishes containing egg — casseroles, stuffings, custards — reach an internal temperature of at least 160 degrees Fahrenheit, about 71 degrees Celsius, measured with a thermometer rather than by eye. Notice that this figure sits just above the yolk's setting range, which is why the simple kitchen cue the same authorities give — cook until both yolk and white are firm — is not an arbitrary simplification but a kitchen translation of the very same number.

You do not need a thermometer for a fried egg, but you genuinely need one for any large egg dish: a baked egg tray, a custard, a pastry filling. In those, appearance is deeply misleading — the surface can look done while the centre has not passed fifty degrees.

Each cooking method and its number#

Translating those numbers into the kitchen changes with the method, because what carries the heat into the egg changes: oil in a pan, boiling water, oven air, steam. These are the common methods and what each one needs to reach:

  • Fried: two to three minutes on each side, or four minutes in a covered pan, until the white is fully set with no translucent patches left.
  • Scrambled: stirred over medium heat until no visible liquid egg remains in the pan; runny scrambled egg is not a doneness level, it is undercooked egg.
  • Omelette: cooked until the surface is dry and the middle is set, then folded; with a wet filling, give it an extra minute covered over low heat so the centre catches up.
  • Hard-boiled: lowered into boiling water and left until the yolk is fully set — crumbly rather than tacky.
  • Soft-boiled: undoubtedly lower risk than raw, but it does not meet the formal standard while the yolk is still liquid; keep it for healthy adults.
  • Baked dishes and custards: measured with a thermometer to 71 degrees Celsius at the deepest point, not at the edge.

The runny yolk: why the answer differs from country to country#

Many people hear that the British eat soft-set eggs without worrying and conclude that the warning is overblown. The truth is more precise than that. The UK Food Standards Agency changed its position in 2017 and accepted raw or runny eggs even for the more vulnerable groups — but it tied that to eggs carrying the British Lion mark or an equivalent assurance scheme, schemes that include vaccinating flocks against Salmonella, production traceability and routine auditing. So the exception is not about eggs in general; it is about eggs produced under a specific national programme, and it followed a risk assessment showing a large drop in the likelihood of Salmonella in that particular supply.

As long as the eggs you buy carry no such scheme certification, the default rule stands: cook until the yolk is firm. That is not a call to give up soft-set eggs entirely, but a call to make the decision knowingly — a healthy adult choosing a runny yolk for themselves is accepting a small, known risk, while serving that same plate to a child, a pregnant woman or an immunocompromised patient is an altogether different decision.

Dishes where the egg stays raw#

There is a whole class of foods in which the egg never passes through enough heat at all: home-made mayonnaise, Caesar dressing, tiramisu, mousse, home-made ice cream, and dessert batters that get tasted before baking. Controlling temperature does not help here, because the recipe contains no cooking step. The answer is pasteurised eggs — eggs heat-treated in a way that destroys Salmonella without cooking them, sold either in the shell or as packaged liquid egg. Using them in these recipes removes the problem at its root and changes nothing about the result on the plate.

Pasteurised liquid egg products are meant mainly for use in a dish that will be cooked, and US authorities recommend bringing the finished product to 71 degrees Celsius, especially when it will be served to an at-risk group. In-shell pasteurised eggs are the better fit for cold recipes that need a whole egg as it comes.

After it cools: two hours, one week, and seventy-four degrees#

Cooking properly counts for little if the egg is then left in conditions that let bacteria grow again, whether from later contamination or from surviving spores. There are three rules here, and all of them are easy to apply:

  • Cooked eggs should not sit out of refrigeration for more than two hours — only one hour when it is hot, above thirty-two degrees — and that includes the buffet plate and the breakfast sandwich in the car.
  • Hard-boiled eggs, in the shell or peeled, should be used within one week of cooking and kept refrigerated throughout.
  • Refrigerated egg-dish leftovers should be reheated to 74 degrees Celsius before serving, as the Saudi FDA advises — not merely warmed through.

Common kitchen mistakes#

  • Microwaving an egg in its shell: steam builds inside faster than the shell can release it and the egg explodes — which applies to reheating a whole boiled egg too, so cut it up first.
  • Cracking an egg on the rim of the bowl you are about to whisk in: that pushes shell fragments, and whatever is on them, into the mixture; a clean flat surface is better.
  • Washing an egg before cracking it: this strips the natural layer sealing the pores and drives contaminants inward, and it does nothing against internal contamination anyway.
  • Using the same spoon or plate that held the raw egg to serve the cooked dish.
  • Tasting raw dough or batter before baking — a habit that checks the flavour and cancels every precaution taken before it.

The lesson comes down to this: eggs are cooked to two numbers, not one — the texture number that begins around sixty and decides what you find on the plate, and the safety number at seventy-one that decides what reaches your stomach. For a single egg, the firm-yolk cue stands in for the thermometer; for large dishes, there is no substitute for measuring; and for cold recipes, there is no substitute for pasteurised eggs. What happens after cooking is part of the cooking: two hours out of the fridge, one week for boiled eggs, and seventy-four degrees on reheating.
